It enhances the clarity of the solution and maintains stability even during high-temperature sterilization processes like UHT and Pasteurizing. The recommended dosage is 0.3-0.5%.
2. **Ice Cream**: As a dispersant and shaping agent, CMC increases the expansion rate of ice cream, prevents the formation of ice crystals, and improves smoothness and texture. The suggested amount is 0.25-0.35%.
3. **Condiments and Jams**: CMC's thickening, suspending, and salt-proof properties make it ideal for stabilizing soy sauce, jam, eight treasure rice pudding, and fruit beverages, enhancing their texture and consistency. The recommended usage is 0.3-0.8%.
